A quick meal from things lurking in the fridge - kale, broccoli, and tofu with curry sauce made from that damn coconut milk, red curry paste, and almond butter served over basmati rice. I pulled the
sauce recipe from Dreena Burton's website. I added a bunch of sriracha for some heat. I normally don't mix coconut milk and nut butter, but it was tasty. I am not a low fat vegan, what can I say? ;)
