Vegan MoFo #17: Snap Kitchen - Houston, TX

My new job offers a corporate discount at My Fit Foods, a chain that offers pre-cooked and packaged "healthy" meals. When I went to check it out, the only vegan options I saw were the hummus and veggie snack box and the fruit and almond butter snack box. Laaame. I remembered that a vegan friend recently recommended Snap Kitchen. It's a similar concept, but Snap Kitchen actually has vegan meals. The night I went, there were 4 vegan soups, 3 vegan breakfasts, and 3 vegan entrees (the pasta zucca, tofu scramble, and Thai curry). I checked the menu online and saw a couple more vegan options. I have driven by this place a zillion times without really thinking about stopping. I'm glad I did! It's not more expensive than dining out anywhere else and some of the items come in different sizes. I reheated the tofu scramble and served it with some frozen broccoli and a "shake" of soy milk, frozen banana, dark chocolate chips, and almond butter. I reheated the Thai green curry and again served it with frozen broccoli.

  1. Neat. I thought MyFitFoods sold stuff from Pat Greer's Kitchen, though. Perhaps you need to order it in advance?

  2. I had heard that, but I didn't see any items from Pat Greer's in the fridge. I should have asked, but it was really late and I was hungry.
