I was flipping through my copy of
175 Hot & Spicy Vegetarian Recipes and saw some very tasty looking Indian dishes. I selected a red lentil and tomato dhal as the main dish and aloo saag (potatoes & spinach) as the side dish. That's a complete meal - lentils for protein; tomatoes, onions, and spinach for veggies; and potatoes for carbs. I added some cayenne pepper to the leftovers today to spice it up!
