After enjoying Indian flavors for dinner on Saturday, I was in the mood for similar flavors tonight. I've been craving quinoa since a friend posted about it, so I decided to make a samosa quinoa bowl. This was definitely delicious, although I will add more cayenne tomorrow when I eat the leftovers. I took a shortcut and cooked my potato in my microwave, but I'm sure this would have been great with roasted potatoes. I used 1/2 cup peas, added ~2 Tbs chopped garlic, and added some grated fresh ginger.
