Crockpot Chickpeas & Biscuits
I couldn't wait to try this recipe for a chickpea-based potpie-type dish made using a Crockpot. It's still just cool enough to justify comfort foods like this. I cooked my own chickpeas for a few hours in my small crockpot instead of using canned. I use a little extra celery and a whole bag of frozen peas. The recipe is written with vegan suggestions for non-dairy milk, nutritional yeast, and vegan margarine. I decided to try out solid coconut oil instead of margarine. That seemed to work really well and it's a healthier choice. It took me 3 days to eat all of this food, but it was perfect to pop this in the microwave before yesterday's kickball game. :)
