I made these taquitos a while ago but somehow never posted them to the web. The citrusy black beans are incredible and I was surprised by how well the fresh salsa kept in the fridge. Both of these recipes come from the
Forks Over Knives Cookbook. I did use some cubed avocado, because I can't eat Mexican food without avocado. This made quite a bit of food, so it was dinner for several days.
