I made the pasta e fagioli with spinach from Appetite for Reduction. I soaked the white beans on Saturday night and cooked them yesterday. That meant all I had to do today was cook the pasta (more than the recipe calls for, of course) and make the tomato sauce. I ended up adding the spinach to the sauce to wilt it, instead of creating layers of pasta, sauce, and spinach. I liked the mild taste of the sauce and the beans added a touch of creaminess, since some of the beans broke apart as I was stirring. Overall, a simple meal for a Monday night.
