Cheesy Quinoa Bites

I've seen this recipe floating around Pinterest. I used flax seed for the egg (1 Tbs ground flax seed + 3 Tbs water) and Daiya mozzarella for the parmesan. I didn't shred carrots, I just chopped matchstick carrots into smaller pieces in the food processor. These bites were just okay. I reheated them today and squirted some sriracha on them. I served them over a salad containing the most adorable mini peppers. Three tiny peppers for just a dollar?! Sure!
