I had little motivation to cook a big meal tonight, so I kept it simple with seitan and broccoli over rice. The seitan and broccoli recipe is from
30 Minute Vegan's Taste of the East. I used my go-to Asian-y
seitan recipe from FatFreeVegan. I cooked the rice in my rice cooker, the seitan in the oven, and started the veggies on the stovetop. When the seitan was ready, I pulled it off the oven, cut it in strips, and tossed it into the skillet with the veggies. Everything was ready in a little over 30 minutes. :)
