Steven and I went to La Jolla for work, but then we got to spend the weekend with Heather and her family. That was mid-August. Then a few weeks ago, we went to Minnesota for his friend's wedding. We went to his parents' cabin in Tower. His mom went out of her way to find tasty vegan treats for me! She found
Dandie's vegan marshmallows, so I got to make s'mores with dark chocolate. She also found the
veganized rice cheese, which I used in quesadillas. I wish I had a picture of my s'mores. On the way back, Steven bought me a copy of Dan Brown's
Lost Symbol. It was so good! I finished it in two days.

Now, on to the food porn!
I used the marinade from
vegandad's tequila chili lime tofu to soak my tofu briefly before grilling it. I topped it with a little salsa. The "refried" beans are made from scratch! I used a recipe from
How to Cook Everything Vegetarian by Mark Bittman. The Mexican rice is from a box from the Publix Greenwise section.

Grilled some seitan. The recipe is based on
fatfreevegan's recipe.

Romaine lettuce topped with organic chickpeas, sauteed onions, garlic, and bell peppers. A healthy salad that actually tastes like something!
